Hi, I am Tiffany Hinton but you may know me as GF Mom Certified. I am a best selling author and lifestyle blogger, professional brand influencer, functional medicine certified health coach and all around gluten-free expert based in Chicago, IL. Why gluten-free you ask? Honestly I could go on about this topic for days. This is my story, and why I choose to live a gluten-free lifestyle. I am going to try to keep a long story short for you.When I was in my teens I was diagnosed with an IBD condition called Ulcerative Colitis. If you are unfamiliar, it can basically be explained as ulcers lining the colon. OK, you don’t have to google that now. Just don’t. At the age of 16, I was told by my medical doctor I would never be able to have children due to this health condition. At the time I didn’t really question it, really who at 16 wants kids right? Fast forward……I am living my life with IBD. I continued to take my steroids and other medicine for my colitis and excluded nuts and seeds from my diet as recommended. I never really felt better and continued to struggle with my intestines and colon bleeding from time to time. I had maxed out my steroids and could not take anymore for the pain. I basically had learned to live sick.
In the Winter of 2007, my health took a turn and I had emergency surgery for appendicitis. The surgeon sent my appendix for a biopsies because he did not know what was growing all over them. Turns out I had Endometriosis on several of my organs. I began to research Endometriosis and what I found opened my eyes. How is it possible that these cells are outside my uterus? What is causing my body to do this? In 2009, I went to my primary OB/GYN and requested a Lap. He denied it and told me to take more hormone pills. This approach was not helping, and certainly not treating the real problem. I had been on the pill since the age of 14, with no relief. I was upset and crying when I left his office. My husband was not happy with the doctor and his interaction. I called the OB/GYN’s office back and demanded an appointment with the head of the office. My next appointment was with Dr. T. Dr. T was honest and I still remember and appreciate his integrity. He told me that they did not have anyone in the practice who was familiar with Endometriosis and told me to find a specialist. I found Dr. Rana, I love this doctor. Dr. Rana is one of a few specialists in the US who focuses on Endometriosis and infertility. Dr. Rana operated on me in the Spring of 2010. It was the second worst case he had seen in 30 years of practice. During my surgery, he called in 2 other doctors to help. My intestines were attached to my organs and my diaphragm. They basically dissected my body. Dr. Rana ran several blood tests. Low and behold, I was not truly suffering from Ulcerative Colitis or Endometriosis. Those conditions were being affected by something else. I had a gluten intolerance. They discovered gluten intolerance was the issue all along. Upon research, I found wheat and processed sugar literally feed the Endometriosis cells in my body.


Enough was enough. This led me to choose a gluten-free lifestyle for good! Since going gluten-free I have lost 60 pounds, am pain free, no longer feel tired, no longer battle unexplained anxiety and depression, take no medicine for colitis, and became a Mommy to three little girls. But as I healed and regained my life back, I couldn’t help but wonder what other women out there were suffering like I had. How many are being pumped with steroids, pills, living in pain, believing it won’t get better? I couldn’t sit back and watch other women go through what I had gone through. I had to do something. I had to help them! I started writing recipes and sharing them. Eventually, that evolved into writing my first cookbook. From the cookbook it evolved to blogging, then eventually coaching other women. And before I knew it, GF Mom Certified was born. Since the start of GF Mom Certified a lot has changed. I wanted to help women more. So I decided to go back to school and become a Certified Functional Medicine Coach, or FMCA. My mission is to hear 1 million stories in 10 years of women who found healing that created life changes, so that they share the path to wellness with others. I want you and your family to thrive.
