
Korean Beef BBQ Cabbage Wraps with Kevin’s Korean BBQ Sauce Recipe

Ingredients:
- 1.5 lb Beef Roast
- 1 package Kevin’s Korean BBQ Sauce
- 1 Tablespoon Olive Oil
- 1 Cup Grape Tomatoes, halved lengthwise
- 1 Cup Cucumber, peeled and diced
- 1 Tablespoon Cilantro, finely chopped
- 1 Tablespoon Mint, finely chopped
- 1 Tablespoon Basil, finely chopped
- 1/4 Cup Shallot, finely diced
- 1 Tablespoon Honey
- 2 Tablespoons Coconut Aminos
- 1 Lime, Juiced
- 1/4 Teaspoon Red Pepper Flakes
- 1 head Nappa Cabbage

Directions:
In a pressure cooker or Instant add olive oil to coat the bottom of the pan. Add beef and pour the package of Kevin’s Korean BBQ sauce over the top. Cook under pressure for 45 minutes, until there is minimal pink.
While the beef is cooking prepare the be vegetables. Combine tomatoes, cucumbers, cilantro, mint, basil, honey, coconut aminos, lime juice and red pepper flakes. Mix well and allow to sit till the beef is ready.
Wash and cut the cabbage leaves in half, cross-wise. Use the top of the leaves for the wraps. Save the bottoms with more stem for another recipe or to feed wildlife.
Once the beef is ready. Turn off the pressure cooker, allow to sit for 10-15 minutes before opening. This will allow for further cooking of the beef. Remove the beef and sit on a cutting board. Pour pan drippings over the beef. Allow to sit for 5 minutes, before slicing. Slice the beef and then slice into smaller strips.
Chef’s Tip: By letting the meat “rest” before eating and also avoid piercing as the meet is cooking so that it does not lose the flavorful juices.
Layer the beef, tomato & cucumbers salad in the cabbage leaf wrap.
