Paleo Strawberry Supergreens Donuts

My girls love to create colorful dishes, but our family has to be cautious about what food colorings we use. Common food coloring brands may contain chemicals and allergens like soy, wheat and corn. Thankfully there are cleaner food coloring brands out in stores like ColorKitchen and Watkins, as well as plant based options you can make at home using colorful foods like beets, turmeric and spirulina.
The girls and I got creative this past St. Patrick’s Day and developed a special paleo friendly green donut using our morning Paleovalley Supergreens Powder. This was a fun challenge, as the powder is flavored strawberry and lemonade. We decided to have fun with the strawberry flavor and just love how these colorful donuts turned out. Below is the recipe so you can try them too!
Paleo Strawberry Supergreens Donuts
2 cups paleo flour blend (or gluten-free all purpose flour if looking to flex)
1/2 cup maple syrup
1 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
1 tbsp Paleovalley Organic Supergreens Powder
2 tsp vanilla extract
1 vanilla bean, scraped
2 eggs or equivalent replacer
3/4 cup coconut milk
2 tbsp coconut oil, melted
1 tsp of spirulina to make them extra green!
Topping – 1/2 cup of dried strawberries
In a large mixing bowl, combine all donut ingredients until well blended. Fill a donut pan 1/2 to 3/4 full with batter. Bake in a 325 degree oven for 12 minutes or until done. Move the entire pan to a wire rack to cool for 5-10 minutes. Remove donuts from the pan and cool completely before sprinkling with crushed strawberries.
